The most planted white grape variety of the island, with medium sized, loosely packed clusters and medium sized berries. Very well adapted to the calcareous soils and the climatic conditions of Cypriot vineyard, it is also a variety with great resistance against  the vine disease of  powdery mildew. Xynisteri grapes cultivated in high altitude vineyards give wines with floral and fruity aromas, minerality and satisfactory acidity. It is also along with Ntopio Mavro the two varieties used for the production of the Commandaria wine and the traditional spirit of Zivania.
